Lentils and Walnut Loaf
This wholesome and delicious meal is not just for the people on vegan diets, there is a good chance your family will dig into it too. Lentils and walnut loaf is packed with protein, good fat, and useful dietary fiber, and can be a family favorite. This is a great option if you want to replace the traditional meat loaf.
Boil the lentils in water or vegetable broth and toast some walnuts for about 10 minutes. Sautee garlic and onion and add in shredded carrots, diced celery, raisins, and apples, and stir over heat for about five minutes. Add all of the ingredients into a loaf pan and bake at 350F for 40 minutes.
