Sweet Potatoes
White and gold potatoes are off limits for many folks with diabetes, but sweet potatoes are generally okay. That’s because sweet potatoes are not actually part of the potato family, despite their misleading name. They do not cause blood sugar to spike as much as regular potatoes, and they are packed with fiber and vitamin A.
However, it’s important to note that preparation can impact how healthy sweet potatoes are for diabetics. Loading them up with brown sugar or marshmallows is going to negate any potential benefits. Instead, try boiling them and mashing them as you would regular white mashed potatoes. For flavor, add a couple of drops of maple syrup and a ¼-teaspoon of butter.
