Wholesome Black Bean Soup
Soups can be the ideal dinner meal, but often aren’t filling enough to last you the entire night. However, this heavenly mixture of black beans, quinoa, and sweet potato will keep your hunger at bay and tastes good as well.
Use a cup of quinoa, boil it for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Meanwhile, sauté some onion and garlic. Then add the sweet potato and jalapenos and simmer over medium heat. In a large pot of water, add chili powder, pepper, vegetable broth, and cumin as well as the rest of the ingredients to the pot.
